This time, we are going back a hundred years because that’s when Warsaw’s gastronomy had its golden era. Warsaw is returning to its progressive roots and is once again becoming the coolest melting pot.
In the restaurants, you find people from Ukraine, Belarus, Georgia, Syria, India, and Vietnam, just as not too long ago, in different establishments, there were Jews, Lithuanians, French, or Germans. They were, and still are, Warsaw citizens.
Mainly, we will focus on the potato because it’s the best, but also matzo, eggplant, roasted pepper, a touch of gingerbread spices and garlic, and… Voila! Bon appetit! Wine from sunny but less obvious regions like Romania, Slovenia, Lebanon, Hungary, Georgia, and Moravia. Signature cocktails based on
seasonal local ingredients.
And the concept is Warsaw-style – a bistro.
